AS A CHILD, I WATCHED MY MUM BAKE CAKES…

Growing up, I watched my mum create beautiful things out of the basics of flour, sugar and eggs. It magnificently transformed into something so beautiful. Even when the pantry was bare, she would somehow prepare for last minute guests by creating something that made the house smell like a home. I remember being drawn to the kitchen to watch her mix the butter and sugar with a hand mixer and be sifting the flour with the other hand. The kitchen would be total mess but totally worth it for what she created.

Ever since my very first birthday, and every birthday after that, mum and dad would stay up after I went to bed to create not 1 cake, but 2 or 3 cakes for me trying to make it the perfect day. Dad was great in the kitchen too, creating the design and somehow mastered the piping work from mum.

As I grew older, I found myself drawn to the kitchen more frequently as mum got me to help her bake the cakes. I was the one holding hand mixer and somehow found my finger in the batter to get a taste of it. While helping her she would talk through the cake; what ingredients went in at the right time and how you had pour love into it, how to get the perfect rise and how important the timer was. I started practicing for my friends and knew I had uncovered a passion. I studied Bachelor of Interior Design, which played a role in my cake designing.

When I officially started my business 2012, I knew I didn’t want to make just a cake. I wanted to bring what my mum brought to me - excitement, smell, imagination. It was important to me that the cake have character, personality, and each have its own unique design.

In my early days, I could not have imagined that I would have the opportunity to create cakes for such amazing people.  One such opportunity was when I was asked to create a replica cake for the Royal Wedding of Prince Harry and Meghan Markle for Weekend Sunrise on Channel 7. The real cake had yet to be unveiled so I had to make my cake from the slim information from media whispers on what the cake would look and taste like. Since then, I have been so fortunate to be able to work with the team to create cakes and have honestly challenged what I thought I could ever achieve. Somehow my hands just know what to do, even if my head is less than sure.

While my favourite design is to work with fresh florals to create an elaborate cake topper, I’ve also been fortunate enough to learn the art and skill of making handmade edible flowers.

When I do have some spare time, I volunteer my time to give cupcakes to those living it rough. The smiles and hugs I receive are precious and priceless. I’ve made cakes for Cake Angel who donates cakes to children with serious medical challenges to help them celebrate special days with a custom designed cake. I have to say I’m the lucky one to be able to serve them.

I create cakes and cupcakes from the best produce available and only use free-range eggs. I take pride in my work and put my heart into creating something amazing. It’s just mind-blowing to think that a simple cake batter can transform into whatever your heart desires and be the centre of such joyous experiences.
